Raisin Granola Bar
Serving Size / Yield
- 2 cups of raisins
- 1 3/4 cup of old-fashioned oats (not instant cook)
- 1 3/4 cup of flour
- 1 cup of brown sugar
- 1 tsp baking soda
- 1 cup of softened butter
- 4 lightly beaten egg yolks
- 1 1/2 cups of sugar
- 3 Tbs cornstarch
- 2 cups of sour cream
Start by putting the raisins into a small bowl and cover them with hot water.
This allows them to become plumb.
While that's happening, start working on the crust and filling.
Preheat your oven to 350 degrees.
Grease your 9x13 inch baking pan with cooking spray or oil.
Get a bowl and mix together flour, baking soda, and oats.
Slowly distribute the butter into the mixture. Use small pieces and blend until the butter is evenly distributed.
Take out 1 1/2 cups of topping and set aside for later use.
Add the rest of the topping into the bottom of the baking pan.
Put in the oven to bake for 15 minutes.
Get a saucepan and combine egg yolks, cornstarch, sour cream, and sugar. Place on medium heat and cook for about 15 minutes, until mixture begins to thicken. If it starts to boil turn down the heat. It should only slowly bubble.
Drain the water from the raisins and stir in the mixture.
Pour the filling into the crust.
Then put back into the oven for another 15 minutes.
The edges should be solid, but the middle should be slightly jiggly still.
Crumble the rest of the topping over the bars and bake for 15 more minutes.
The middle will still be slightly jiggly, but will set once it starts to cool.
Cut into bars and serve.
