This muffin recipe requires no flour, sugar or oil. Although they are not included, these raisin, nut and oat muffins make for one tasty treat. They're perfect for breakfast or an mid-afternoon snack.

  • 2 1/2 C plus 2 Tbs. oats
  • 2-3 bananas
  • 2 eggs
  • 1/3 C honey
  • 3/4 C milk
  • 2 tsp. vanilla extract
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 C raisins
  • 1/2 C assorted nuts

Preheat oven to 350 degrees. Line muffin tray with liners.

Place 1 1/2 cups of oats in a food processor and pulse until they reach a flour consistency.

Mash bananas. Add eggs, honey, milk and vanilla. Mix to combine.

Add dry ingredients to wet ingredients and mix until just incorporated. Allow these to sit for 10 minutes to soak the oats.

Pour batter into muffin tin. Top with remaining oats.

Bake for 20 to 23 minutes, or until golden brown. Serve warm.
