Ranch Chicken Pitas

This is a great lunch recipe – it'll keep you full for hours and it's delicious!

Ingredients

  • 2-3 skinless chicken breasts
  • Ranch dressing
  • Romaine lettuce
  • 2 scallions, chopped
  • 1-2 Tbs. butter or margarine
  • Finely shredded Monterey Jack cheese or your choice of cheese
  • 2 plum tomatoes, thinly sliced
  • Seasonings: Dill, Garlic, Parsley

Directions

Cut up chicken in about 1 inch pieces. To a medium frying pan add margarine, scallions, seasonings and chicken and sauté until chicken is fully cooked. In the last minute of cooking, put the 4 pitas stacked onto a microwave safe plate and heat on medium for 1 minute to lightly heat. Line each pita with the lettuce then tomatoes, add chicken, then dressing and top with the cheese.

Yield: 4 servings
