Ranch Potato Salad

An easy savory summer potato salad with the taste of ranch dressing instead of the usual mayonnaise dressing.

Ingredients

  • 2 lb. all-purpose potatoes, peeled and diced
  • 1 bunch scallions
  • 1 C. ham, cut into bite-sized pieces (or 4 slices cooked bacon, crumbled)
  • 1 C. frozen peas, thawed
  • 1/2 C. chopped celery
  • 1/2 C. diced carrots
  • 1/2 C. prepared ranch dressing, or to taste
  • salt and pepper to taste

Directions

Place the potatoes in a large saucepan and cover with water. Cover and heat to boiling. Turn heat down to simmer and cook until potatoes are tender. Drain potatoes and place in medium bowl. Chop the scallions and add the white portion and two inches of the green portion to the potatoes. Add the peas, celery, carrots, and ranch dressing to the potatoes and season to taste with salt and pepper.
