Ranch Potato Salad

Ranch dressing makes this potato salad creamy and delicious.

Ingredients

  • 6 medium potatoes (about 3-1/2 lbs.), cooked, peeled and sliced
  • 1/2 C. chopped celery
  • 1/4 C. sliced green onions
  • 2 Tbs. chopped parsley
  • 1 tsp. salt
  • 1/8 tsp. black pepper
  • 1 C. ranch salad dressing
  • 1 Tbs. Dijon mustard
  • 2 hard-cooked eggs, finely chopped
  • Paprika
  • Lettuce

Directions

Combine potatoes, celery, onions, parsley, salt and pepper in a large bowl. Stir together dressing and mustard in a small bowl; pour over potato mixture and toss lightly. Cover and refrigerate several hours. Sprinkle with eggs and paprika. Serve in a lettuce-lined bowl, if desired.

  • OMG!! This Ranch Potato Salad renewed my taste buds for potato salads. I had really grown tired and bored with the mayo salads. Always so glumpy! This salad is so creamy and wonderful. I changed it a little, using red potatos with the skins, didn't have green onions so I used white onion and I used Cucumber Ranch instead of regular rRanch...I loved it, very good recipe!!!

  • I really liked this recipe .Its easy and tasty. The only change I made to the origanal was to use cilantro as the parsley. It gave it a wonderful flavor. The ranch dressing does NOT overpower the salad.Thanks for the recipe,I plan to use it from now on as my hubby doesnt like mayo.
