  • 3/4 C. raspberries
  • 1 ripe banana
  • 1 1/2 C. all-purpose flour
  • 3/4 tsp. ground cinnamon
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/8 tsp. ground nutmeg
  • 1 C. brown sugar
  • 2 eggs
  • 1/2 C. extra virgin olive oil
  • 1/2 tsp. lemon extract

Begin by preheating oven to 325 degrees F. Grease a loaf pan and in a bowl mash the raspberries. In another bowl, mash the banana. Combine flour, cinnamon, baking soda, salt, and nutmeg in the banana bowl. MIx both mixtures and stir in flour. Pour batter into prepared loaf pan and bake in the preheated oven for about an 1 hour.
