Raspberry Brulee
Ingredients
- 1 C. raspberries
- 1/3 C. sugar
- 2 Tbs. cornstarch
- 1/4 tsp. salt
- 2 C. nonfat half-and-half or skim milk
- 1/2 tsp. vanilla
- 4 tsp. packed brown sugar
Directions
Place raspberries evenly in the bottom of eight 10-oz. custard cup or dessert bowls. Mix sugar, cornstarch and salt in a small saucepan. Stir in half-and-half and heat to boiling over medium heat, stirring frequently. Stir in vanilla and spoon mixture over raspberries. Set oven control to broil. Sprinkle 1-tsp. brown sugar over mixture in each cup. Broil with tops 4-6 inches from heat for 2-3 minutes or until brown sugar is melted. Serve immediately.
