Raspberry Chicken Recipe

This microwave recipe uses raspberry vinegar and raspberry preserves for a double dose of fruity flavor.

Ingredients

  • 4 chicken breasts
  • 3 tsp. chopped gingerroot
  • 1/3 C. raspberry preserves
  • 2 tsp. raspberry vinegar

Directions

Rub chicken pieces with ginger root. Arrange chicken skin side up cover tightly and microwave on high for 12 minutes. Then drain. Pour remaining ingredients over chicken. Serve chicken over pasta with fresh raspberries for garnish
