  • 1/2 C. butter
  • 2 C. chocolate, chopped and divided
  • 2 eggs
  • 1/2 C. sugar
  • 1 C. flour
  • 1/2 tsp. salt
  • 1 tsp. almond extract
  • 1/4 C. peanuts
  • 3/4 C. raspberry jam

Set your oven to 325 degrees F. Flour an 8-by-8-inch pan. Melt butter with 1 C. of chocolate in microwave. Stop and stir every 30 seconds until smooth. In a large bowl, beat eggs until light. Add sugar and continue to beat. Stir in chocolate mixture. Add flour, salt and almond extract and mix until combined. Mix in flour, salt and almond. Spread half of dough into prepared pan and bake for 15 to 20 minutes.

Mix jam with peanuts. Spread jam mixture over warm chocolate crust. Bake for 30 to 40 minutes. Cut into bars. Melt remaining chocolate chunks in microwave. Dip bars in melted chocolate and place on baking sheet. Chill in fridge until firm.
