This cold souffle is perfect for Valentine's Day!

  • 1 1/2 C. milk
  • 4 oz. sweet chocolate
  • 3 eggs, separated
  • 1/4 C. sugar
  • 1 1/2 packets unflavored gelatin
  • 1/4 C. water
  • 1 C. whipping cream
  • 6 oz. fresh raspberries

Prepare a 1-quart souffle dish.  Melt chocolate in 1/2 cup milk over low heat.  Add remaining milk.  Beat together 3 egg yolks with sugar until light in color.  Add mixture to flavored milk and return to heat until the mixture has thickened.  Dissolve gelatin in water and add to custard.  Cool.  Add lightly beaten cream and stiffly beaten egg whites. Put half the mixture in the souffle dish, sandwich with raspberries and remainder of souffle mixture.  Chill 4-6 hours.  Decorate with well drained raspberries.
