Raspberry, Coffee, & Cinnamon Flavored Tiramisu

- 1/2 cup brewed coffee, espresso
- 3/4 cup of sugar, divided
- 2 teaspoons of cinnamon
- 16 ounces of mascarpone cheese, softened
- 1 teaspoon of vanilla extract
- 1 cup of heavy cream
- 14 crisp Italian ladyfingers
- 1/2 teaspoon of unsweetened cocoa powder
- 1 cup of raspberries
Mix 1/2 brewed coffee, 1/4 cup of sugar and cinnamon in a small pan on medium heat. Stir until sugar is dissolved. Then turn off heat.
In a medium bowl, blend mascarpone cheese, the remaining sugar, and vanilla until the texture is smooth. Beat in cream.
Add the cream and stir until it is well blended.
Take the Italian ladyfingers and dip half of them in the coffee blend. Then, take an 8-inch baking dish and position the ladyfingers in a single layer. Take the mascarpone mixture and coat it over half of the ladyfingers. Put fresh raspberries on top. Repeat pattern. Arrange the top with raspberries. Trickle cinnamon powder or drizzle the coffee mixture on top. Chill for at least four hours.
