  • 2 tablespoons unflavored gelatin powder
  • 1 box cheesecake flavored instant pudding mix
  • ½ cup cold water
  • 1 cup boiling water
  • 1/8 cup sweetened condensed milk
  • 1 cup fresh raspberries + more for garnish
  • 1/3 cup chocolate, melted

Pour the cold water into a bowl and sprinkle the gelatin in. Allow the gelatin to absorb the water for 2-3 minutes, without mixing. Stir in the boiling water until the powder is fully absorbed. Stir in the instant pudding mix. Pour into blender and add condensed milk. Refrigerate until thickened, stir in the raspberries and then pour into the mini bundt molds. Refrigerate until firm and un-mold. Serve topped with melted chocolate and raspberries.
