Raspberry Vinaigrette Salad

Ingredients
- Dressing:
- 3/8 C. olive oil
- 1/4 C. mixed berry or cranberry juice (i.e. Bolthouse Farms or Naked)
- 1/4 C. raspberry infused vinegar
- 1/8 C. balsamic vinegar
- 1/2 tsp. dried mustard
- 1/8 C. finely diced onion
- 1 lg. clove garlic, crushed
- salt and pepper, to taste
- Salad:
- mixed greens or spinach
- fresh raspberries, strawberries and/or pomegranate arils (seeds)
- craisins
- sliced almonds
- slivered red onion
- cheese, if desired (shredded Parmesan or chevre)
Directions
Blend all dressing ingredients with hand blender (can be made ahead and refrigerated- shake before serving). Toss lightly with remaining ingredients and serve immediately.
