Ingredients

  • Dressing:
  • 3/8 C. olive oil
  • 1/4 C. mixed berry or cranberry juice (i.e. Bolthouse Farms or Naked)
  • 1/4 C. raspberry infused vinegar
  • 1/8 C. balsamic vinegar
  • 1/2 tsp. dried mustard
  • 1/8 C. finely diced onion
  • 1 lg. clove garlic, crushed
  • salt and pepper, to taste
  • Salad:
  • mixed greens or spinach
  • fresh raspberries, strawberries and/or pomegranate arils (seeds)
  • craisins
  • sliced almonds
  • slivered red onion
  • cheese, if desired (shredded Parmesan or chevre)

Directions

Blend all dressing ingredients with hand blender (can be made ahead and refrigerated- shake before serving). Toss lightly with remaining ingredients and serve immediately.
