Raw Apple Coffee Cake

A great cake to make during the fall, the fresh-picked apples make such a difference in flavor!

  • 1 C. sugar
  • 1/2 C. shortening
  • 1 1/2 C. flour
  • 1 tsp. baking soda
  • 1 egg
  • 2 C. chopped apple, peeled
  • Pinch of salt
  • 1 tsp. vanilla
  • Chopped nuts to taste

Combine above ingredients. Pour into a greased and floured 9x9 pan. Sprinkle with brown sugar and cinnamon. Bake 30-45 minutes at 350 degrees. Best served warm. Good served with whipped cream or ice cream.
