Raw Avocado and Pepper Quesadillas

Serving Size / Yield
- 3 firm-ripe avocado, halved, pitted, peeled and diced
- ½ red bell pepper, finely chopped and seeded
- cheddar cheese, shredded
- ⅓ cup fresh chopped cilantro
- 4 large flour tortillas
Chop all of the vegetables. Stir together cheese, avocado, bell pepper, and cilantro.
Cut tortilla rolls into quarter pieces and sandwich vegetable mix in-between them.
