  • 3 C. shredded carrots
  • 8 oz. dates, pitted
  • 1 C. raw walnuts
  • 2/3 C. unsweetened shredded coconut
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ginger
  • 1/ 4 tsp. nutmeg
  • pinch of salt
  • 1/2 C. raisins
  • 2 C. raw cashews
  • 2/3 C. coconut oil, melted
  • 1/3 C. water
  • 1/3 C. honey
  • 2 tsp. vanilla
  • 2 T. lemon juice

In a food processor, combine carrots, dates, walnuts, shredded coconut, cinnamon, ginger, nutmeg, salt, and raisins. Blend until well combined. Press mixture into a cake pan. Combine cashews, coconut oil, water, honey, vanilla, and lemon juice in your food processor. Once smooth, spread mixture on top of carrot cake. Serve.
