  • 1 C Raw Walnuts, soaked 2 hours to overnight
  • 1 C Dates
  • ½ C Water
  • ½ C Agave Nectar
  • ¼ C Coconut Oil
  • 1/8 tsp Salt
  • 1 C Vanilla Almond Cream

Begin this recipe for raw moon pies by soaking your raw walnuts for at least two hours to overnight. Continue by processing your dates in your food processor until they are finely ground. Add the walnuts, water, agave nectar, coconut oil, and salt. Process this mixture until smooth and creamy.

Spread this mixture in a thin and even layer on Teflex dehydrator sheets. Dehydrate this mixture at 105 degrees for four to six hours. Remove the Teflex sheets and continue dehydrating for an additional six hours.

Once dehydrated, remove your dough from the machine and transfer onto a clean and flat work surface. Use a cookie cutter to cut out an even number of circles from the dough. Continue by spreading an even ¼-inch to 1/8-inch layer of your vanilla almond cream on half of the cookies. Top with your remaining cookies and serve or freeze and enjoy as a raw ice cream sandwich.
