Reagan's Mama's Cornbread Dressing
Ingredients
- 2 large onions, finely chopped
- 10 ribs celery, finely chopped
- 1/2 C. butter (one stick)
- 2 quarts cornbread crumbs
- 4 slices white bread
- 1 Tbs. black pepper
- 1 1/2 tsp. poultry seasoning
- 4 hard boiled eggs, chopped
- 3 Tbs. Worcestershire sauce
- Turkey stock or canned broth
- Season to taste with fresh sage
Directions
Bake 2 pans of corn bread the day before. Crumble corn bread into a large bowl. Add crumbled white bread. Sauté the onion and celery in melted butter until tender. Pour onion and celery into bread crumbs. Add pepper, eggs and Worcestershire. Add enough stock or canned broth to make very moist (about the consistency of cake batter). Taste and then add salt and more Worcestershire sauce if necessary. Never salt before you add stock because the stock may be salty. Pour into buttered large, shallow pan and bake in preheated 400 degree oven until it is nice and brown (about 30-40 minutes).
