Recipe For Popovers
Serving Size / Yield
- 2 Eggs
- 1 C Milk
- 1 C Sifted all purpose flour
- 1/2 tsp Salt
Heat oven to 400 F. Heavily butter 8 six ounce custard cups. Place on baking sheet for easy handling. Slide into hot oven to heat while mixing batter.
Beat eggs slightly in a bowl or 1 quart measure. Add remaining ingredients. Beat briskly 1/2 minute, scrape beater and sides of bowl, beat 1/2 minute longer. Batter will be creamy smooth and rather thin.
Pour batter into heated custard cups, filling each 1/3 full to allow room for popping.
Bake in a hot oven (400 F) for 50 minutes, or until popped, crisp, and golden brown.
Do not peek during baking, for they may fall.
Serve hot with butter (or margarine) and jam.
