Red Bean and Corn Salad
Ingredients
- 1 15-oz. can cannelli beans, rinsed and drained
- 1 15-oz. can red kidney beans, rinsed and drained
- 1 10-oz. pkg. frozen corn, thawed and drained
- 2 zucchini, diced
- 1/3 C. red onion, diced
- 1/4 C. fresh parsley, chopped
- 1/2 C. oil
- 1/2 C. vinegar
- 1/3 C. sugar
- 1 tsp. dry mustard
- Salt and pepper to taste
Directions
Combine all ingredients and mix well. Chill before serving.
