Red Bean and Corn Salad

For a filling salad that’s all quite pretty, try your hand at this one.

Ingredients

  • 1 15-oz. can cannelli beans, rinsed and drained
  • 1 15-oz. can red kidney beans, rinsed and drained
  • 1 10-oz. pkg. frozen corn, thawed and drained
  • 2 zucchini, diced
  • 1/3 C. red onion, diced
  • 1/4 C. fresh parsley, chopped
  • 1/2 C. oil
  • 1/2 C. vinegar
  • 1/3 C. sugar
  • 1 tsp. dry mustard
  • Salt and pepper to taste

Directions

Combine all ingredients and mix well. Chill before serving.
