Ingredients

  • 1 lb. dried kidney beans (2 C.), sorted, rinsed
  • 1 lg. green bell pepper, chopped
  • 1 lg. onion, chopped
  • 2 cloves garlic, finely chopped
  • 7 C. water
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 C. uncooked instant rice
  • red pepper sauce

Directions

In slow cooker, mix all ingredients except rice and pepper sauce. Cover; cook on High heat 4 to 5 hours. Stir in rice; cook on High heat 15 to 20 minutes or until rice is tender. Serve with pepper sauce.
