  • 2lbs chicken breast, boneless and skinless, cut into thin small strips
  • 1 can diced tomatoes with green chiles
  • 4 red bell peppers, cut into thin strips
  • 1 large onion, cut into thing strips
  • 3 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon coriander
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoon lime juice
  • tortillas

Pour half of the tomatoes into the crockpot. Top with half of the bell peppers and half of the onion. Sprinkle the garlic on top and place the chicken on top. Whisk together chili powder, paprika, cumin, coriander, salt and pepper in a bowl. Evenly spread this over the chicken and top with remaining tomatoes and top with bell peppers and onions. Cover and cook on high for 3-4 hours, or until chicken has cooked. In a small bowl, whisk together the lime juice and honey and mix in well. Serve in tortillas as desired.
