Ingredients

  • ¼ C. olive oil
  • 6 cloves garlic, minced
  • 2 red chili peppers, seeded and diced
  • 2 (15 oz.) cans cannellini beans, rinsed and drained
  • 1/3 C. water
  • 1 C. ricotta cheese
  • ½ C. Parmesan cheese, grated
  • ½ tsp. black pepper

Directions

In a saucepan, heat oil and sauté garlic and chili peppers until softened and fragrant. Transfer to a food processor with water, beans, ricotta, Parmesan, and pepper. Blend until smooth, spoon into a greased crockpot, and cook on low for 2 hours.
