Here is a great Mexican enchilada casserole recipe that your whole family will enjoy.

  • 8 oz. sour cream
  • 1 can diced green chilies
  • 1 can EACH Green Chili and Red Enchilada sauce
  • 2 lbs. hamburger
  • 1/2 C. water
  • 1 diced onion
  • 16 oz. shredded Mexican cheese
  • Jalepenos to taste
  • 1 pkg. corn tortillas
  • 1 pkg. taco seasoning

Mix sour cream and green chilies in a small bowl. Brown hamburger with onion and water. Add taco seasoning.

Grease a 9x13 pan.  Line the bottom with a double layer of tortillas. Then layer the hamburger, cheese, and sour cream/green chili mix. Pour most of the red sauce on one half and most of the green sauce on the other half, and end with a top layer of tortillas. Pour remaining sauce over. Bake at 350 degrees for 45-60 minutes.
