Red & Green Enchilada Casserole
Serving Size / Yield
- 8 oz. sour cream
- 1 can diced green chilies
- 1 can EACH Green Chili and Red Enchilada sauce
- 2 lbs. hamburger
- 1/2 C. water
- 1 diced onion
- 16 oz. shredded Mexican cheese
- Jalepenos to taste
- 1 pkg. corn tortillas
- 1 pkg. taco seasoning
Mix sour cream and green chilies in a small bowl. Brown hamburger with onion and water. Add taco seasoning.
Grease a 9x13 pan. Line the bottom with a double layer of tortillas. Then layer the hamburger, cheese, and sour cream/green chili mix. Pour most of the red sauce on one half and most of the green sauce on the other half, and end with a top layer of tortillas. Pour remaining sauce over. Bake at 350 degrees for 45-60 minutes.
