Red Kidney Bean Curry

Ingredients
- 1 C. red kidney beans
- 2 Tbs. clarified butter
- 1 tsp. cumin seeds
- 1 tsp. ginger garlic paste
- 1/2 tsp. red chili powder
- 1/2 C. onion, chopped
- 3 tomatoes, chopped
- 2 tsp. coriander leaves
- 2 Tbs. lemon juice
- 1 tsp. garam masala (powder)
Directions
Soak 1 cup of red kidney beans overnight. Cook/boil in water in the morning. Drain the water . Heat clarified butter in skillet and fry cumin seeds in butter. Add onion, ginger garlic paste and chili powder. Add chopped tomatoes, onions and cooked beans to the mixture. Add salt and masala powder. Mix well and boil until it starts to thicken. Add coriander leaves. Before serving, add lemon juice.
