  • 1 C. shrimp
  • 3 T. seafood seasoning
  • 1/8 C. cider vinegar
  • 2 whole tomatoes, diced
  • 1 jalapeno, diced
  • 2 T. red onion, diced
  • 1 T. cilantro, chopped
  • 1/2 tsp. salt
  • pinch of black pepper

Create an ice bath for later use. In a large pot, add shrimp and cover with one inch of water. Pour in the cider vinegar and seafood seasoning. Stir constantly until boiling. Immediately transfer to the ice bath for two minutes. Drain, peel, devein, and rinse. Roughly chop the shrimp and place in a bowl. Add the remaining ingredients and stir. Refrigerate until ready to serve.
