  • 1/2 lb Smoked Sausage, sliced (optional)
  • 1 Large Red Sweet Pepper
  • 1 pt Whipping Cream
  • ½ cup Parmesan Cheese
  • ½ tsp Cajun Seasoning
  • 1 box Pasta, any shape
  • Pasley to garnish

Roast red pepper in a 350 degree oven for 15 minutes. Place pepper in a ziplock plastic bag for 20-30 minutes. Remove and clean out seeds and stem. (If you can buy roasted red peppers, use them and leave off this step). Cook pasta. Place roasted pepper, cream, Parmesan cheese, and Cajun seasoning in a blender. Cover and puree. Sauté sausage in a sauce pan; set aside. In another sauce pan simmer the pureed pepper mixture until thickened. Add sausage. Serve over pasta. Garnish with green onions.
