Red Potato Salad Recipe

- 5 lbs of red potatoes
- 1 large onion
- 3 cups mayonnaise
- 2 teaspoons of salt
- 1 teaspoon of pepper
- 1 teaspoon of paprika
Begin by cutting your potatoes into small, bites size squares. Do not peel the potatoes. You want to keep your salad colorful. Place potatoes in a pan of water and bring to a boil. Allow potatoes to cook until tender.
While your potatoes are cooking, peel and cut your onion into very small pieces. Put them in a large serving bowl.
When your potatoes are tender, drain and add them into the serving bowl with the onions. Allow the potatoes to cool down before adding the mayonnaise. Stir in the salt, pepper, and paprika.
Place your salad in the refrigerator and serve when cold.
