Red Velvet Cake

When you cut into this cake, there's always the surprise of the red inside!

Ingredients

  • 1/2 C. shortening
  • 1 tsp. butter flavored extract
  • 1 1/2 C. white sugar
  • 2 eggs
  • 4 Tbs. red food coloring
  • 2 Tbs. unsweetened cocoa powder
  • 1 C. buttermilk
  • 1 tsp. salt
  • 2 1/2 C. sifted all-purpose flour
  • 1 Tbs. distilled white vinegar
  • 1 tsp. baking soda
  • Cream Cheese Frosting:
  • 1/2 C. butter, room temperature
  • 1 8 oz. pkg. cream cheese, room temperature
  • 4 C. confectioners' sugar
  • 1 tsp. vanilla extract

Directions

Preheat oven to 350 degrees. Grease and flour 2 - 9 inch round pans. Cream shortening, butter flavoring, sugar, and eggs until light and fluffy. Make a paste with food coloring and cocoa and add to the shortening mixture. Mix buttermilk, salt, baking soda and vinegar; add to mixture. Slowly add flour to mixture. Put batter into 2 greased 9 inch round pans. Bake in preheated oven for 25-30 minutes. Allow to cool completely, then frost with Cream Cheese Frosting.

To Make Cream Cheese Frosting: Combine 1/2 C. butter, cream cheese, confectioners' sugar and 1 tsp. vanilla. Mix until well blended.
