  • 2oz mozzarella cheese, shredded
  • 4 roasted red bell peppers
  • 1 can diced tomatoes
  • 4 sun-dried tomatoes
  • 2 cloves garlic, minced
  • 1 green onion, chopped
  • 3 teaspoons lemon juice
  • ½ cup mayonnaise
  • ½ cup plain Greek yogurt
  • 1 tablespoon fresh dill
  • 1 tablespoon olive oil
  • ½ cup walnuts, chopped
  • salt
  • pepper

Drain the juices from the tomatoes and pour them into the crockpot. Stir in the peppers, onion and garlic. Drizzle with oil and season with salt and pepper to taste. Cook in crockpot for 1-2 hours, or until the onions are browned. Let the mix cool and process in a food processor. Add the walnuts, sun-dried tomatoes, mayonnaise, yogurt, lime juice and dill. Puree until smooth and refrigerate before serving.
