This red, white and blue tenderloin would be a perfect dinner for the President and First Lady.

  • Cooking spray
  • 1 pork tenderloin (about ¾ pound)
  • 1/3 C. ricotta cheese
  • 1 tsp. minced fresh basil
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 2 tsp. melted butter
  • 1/2 C. strawberry jam
  • 1 Tbs. orange juice
  • 1/2 C. fresh blueberries

Preheat oven to 375 degrees. Spray 7x11-inch baking dish with cooking spray. Butterfly tenderloin lengthwise and spread open to lie flat. Cover with plastic wrap and flatten to about 1/2-inch thickness. Remove plastic wrap. Spread cheese over meat and sprinkle with basil, salt and pepper.Roll up jelly-roll style and tie at 2-inch intervals with kitchen string. Secure ends with toothpicks. Brush tenderloin with melted butter. Bake for 30-35 minutes. Stand 5 minutes before slicing. Just before tenderloin is ready to serve, place strawberry jam in microwave-safe dish. Stir in orange juice and microwave on medium high until warm. Stir in blueberries and serve over tenderloin.
