  • 4 (8-ounce) pieces bone-in beef short ribs
  • 1 T. vegetable oil
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 medium onion, finely chopped
  • 2 tsp. minced garlic
  • 1 C. pureed tomatoes
  • 1 1/2 cups red wine
  • 4 cups beef broth
  • 1 tsp. thyme
  • 1 T. red wine vinegar
  • 2 T. balsamic vinegar

Heat oil in a skillet over medium to high heat. Brown beef for five to eight minutes, using tongs to turn on all sides. Remove from skillet and season with salt and pepper on a separate plate and set aside. Add onion and garlic to skillet with remaining oil and sauté until fragrant and tender. Add tomato puree and heat to a boil. Stir in wine and continue to boil until mixture begins to thicken, about 8 minutes. Transfer ribs to crockpot and pour in heated mixture. Add in beef broth, thyme, red wine vinegar, and balsamic vinegar. Cover and cook on low for 6-8 hours. Serve with steamed veggies!
