A traditional egg salad with unexpected touches of Tabasco, parmesan, and bacon.

  • 8 hard cooked eggs
  • 5 Tbs. mayonnaise
  • 1 Tbs. mustard
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • dash paprika
  • 1 large onion
  • 1 green pepper
  • 1 Tbs. Tabasco sauce
  • 1 C. shredded parmesan cheese
  • 16 slices bacon
  • desired amount of lettuce
  • 16 slice rye bread, toasted

Chop eggs and place them in a large mixing bowl. Dice the green pepper and onion into small pieces. Add the mayo, mustard, salt, pepper, paprika, onion, green pepper, Tabasco, and cheese to the eggs, mixing well. Cook the bacon until crisp. Place bacon on paper towel to soak up any grease. To serve, place bacon, some lettuce, and the egg salad on a piece of toasted rye bread. Cover with second piece and serve. Makes 8 servings.
