  • 1-2/3 cups flour
  • ¾ cups brown sugar
  • ¼ cup white sugar
  • ¼ teaspoon baking soda
  • 1 teaspoon baking powder
  • ¾ cup salted butter, room temperature
  • ½ cup peanut butter
  • 3 egg whites
  • 1½ teaspoon vanilla extract
  • ½ cup sour cream
  • ½ cup milk
  • ¾ cup Reese’s Pieces
  • ½ cup mini Reese’s Peanut Butter Cups
  • Icing:
  • ½ cup butter
  • ½ cup shortening
  • 4 cups powdered sugar
  • ¾ cup peanut butter
  • 3 tablespoons milk or water
  • ½ cup Reese’s Pieces

Preheat the oven to 350°F. In a large bowl, whisk the flour, sugars, baking soda and powder, until well mixed. Using an electric mixer, beat in the butter, peanut butter, egg whites, vanilla, sour cream and milk. Add the Reese’s Pieces and peanut butter cups. Fill cupcake liners halfway with the mix and bake for 18-20 minutes. Remove the cupcakes and let cool for 3 minutes, then remove to cooling rack and let finish cooling. In a bowl, mix together the butter and shortening until smooth. Add 2 cups of powdered sugar, peanut butter and 1 tablespoon or water or milk, and mix until smooth. Add the remainder of powdered sugar and mix well, adding additional water until the right fluffy and smooth consistency. Place the icing into a large Ziplock bag and seal. Cut off a corner and ice the cupcakes. Decorate with Reese’s Pieces.
