This is probably the best salad out there! Seriously, the dressing is so good, you’ll put it on every salad from here on out. It’s super healthy with the kale and raw Brussel sprouts and you can eat as much as you want without feeling guilty. Bring this salad to your next gathering and amaze the masses!

  • Dressing
  • ¼ C. lemon juice
  • 1 Tbs. shallots, minced
  • 2 tsp. Honey
  • 1 ½ tsp. Lemon zest
  • ½ tsp. Garlic, minced
  • 2 Tbs. Dijon mustard
  • ¼ C. olive oil
  • Salad
  • 4 C. kale, shredded or chopped
  • 4 C. Brussels Sprouts, thinly sliced or shredded
  • ½ C. toasted almonds, slivered
  • ½ C. Parmesan cheese, freshly shredded
  • ½ C. dried cranberries

Combine all of the dressing ingredients and set it aside. Mix the salad ingredients together and toss it with the dressing.
