Even though this soup is no longer on the menu at the Corner Bakery, it's still possible to enjoy the soup you loved in your home. This version is loaded with vegetables and chicken in a refreshing lemon broth.

  • 2 Tbs. oil, divided
  • 1 lb. boneless, skinless chicken thighs, cut into 1-in. chunks
  • sea salt and pepper
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 3 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1/2 tsp. dried thyme
  • 5 C. chicken stock
  • 2 bay leaves
  • 3/4 C. orzo pasta, uncooked
  • 1 sprig rosemary
  • juice of 1 lemon
  • 2 Tbs. fresh parsley leaves, chopped

In a large pot, heat 1 Tbs. oil over medium heat. Season the chicken thighs with salt and pepper, to taste, and add it to the pot. Cook for 2 to 3 minutes, or until golden, and set aside.

Add the remaining oil to the pot and saute the garlic, onion, carrots, and celery for 3 to 4 minutes, stirring occasionally. Add the thyme and cook for 1 minute, or until fragrant. Whisk in the chicken stock, bay leaves, and 1 C. water. Bring the mixture to a boil, then add the orzo, rosemary, and chicken.

Reduce the heat to a simmer and cook for 10 to 12 minutes, or until the orzo is tender. Stir in the lemon juice and parsley. Season with salt and pepper to taste.
