A touch of mint extract gives a cool aftertaste to this smooth and creamy chocolate pudding. We suggest serving garnished with mint leaves and ripe red strawberries.

  • 3 C. Whole Milk
  • 2 tsp. Mint Extract
  • 1/2 C. Granulated Sugar
  • 3/4 C. All Purpose Flour
  • 1/8 tsp. Salt
  • 1 tsp. Vanilla Extract
  • 6 Tbs. Semi-Sweet Chocolate Chips

Pour 2 cups of milk into a small saucepan and warm over medium-high heat until nearly boiling. Remove milk from heat and stir in mint extract. Cover and let milk mixture sit for 10 minutes. In a large bowl, whisk together sugar, flour, and salt. Stir in the remaining cup of milk and vanilla. Stir warm milk into sugar mixture and return to saucepan. Stir mixture constantly over medium heat until thickened to the consistency of heavy cream. Remove from heat, add chocolate chips and stir until smooth. Strain pudding into a large measuring cup. Pour into bowls and immediately serve warm, or cover and refrigerate until ready to serve.
