  • 1 lb. skirt steak, sliced long ways
  • 2 Tbs. olive oil
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 package of mixed greens salad
  • ½ C. fresh peanuts
  • 2 mangos, cut into large pieces
  • Dressing of your choice (Vinaigrette recommended)

Heat 2 tbs. of oil in a medium skillet. Season steak with salt and pepper. Cook for 3-4 minutes on each side. Remove from heat.

Lay steak and mangos on a bed of mixed green salad. Sprinkle with peanuts. Toss with a salad dressing of your choice and serve.
