Refried Bean Burritos

These burritos are super easy to make! They're perfect for a camping trip or just a quick dinner.

4-6 servings

Ingredients

  • 12 tortillas
  • one 16-oz. can refried beans
  • salt
  • pepper
  • chili powder
  • one 8-oz. block sharp cheddar cheese
  • one 4-oz. can whole green chilies, seeded and rinsed
  • 1/4 C. cooking oil

Directions

Spread each tortilla with 2-3 tablespoons refried beans.  Sprinkle each with a little salt, pepper, and chili powder.  Cut cheese into 12 julienne strips or sticks, 4 to 5 inches long.  Place one cheese stick atop bean mixture on each tortilla. Slice chilies lengthwise into 12 strips; place atop cheese.  Roll up tortillas.  In 10-inch skillet, heat oil over stove top or open fire.  Cook half the burritos at at a time over medium heat, until tortillas are crisp and cheese just begins to melt, 4-6 minutes, turning occasionally.
