Refrigerator Bran Muffins

These muffins can be made up to 2 weeks ahead of time, so you can bake them at your leisure.

Ingredients

  • 2 1/2 C. buttermilk or 2 1/4 C. milk + 1/4 C. vinegar
  • 1/2 C. vegetable oil
  • 2 eggs
  • 3 C. Raisin Bran cereal
  • 2 1/2 C. flour
  • 1 C. sugar
  • 1 1/4 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 C. chopped nuts

Directions

In a large bowl, combine buttermilk, oil, and eggs; beat well. Add remaining ingredients and stir just until dry ingredients are moistened. (If desired, muffins can be baked later. Cover tightly; refrigerate for up to 2 weeks.)

When ready to bake, preheat oven to 400 degrees. Grease muffins cups or line with paper liners. Fill prepared muffin cups 1/2 full. Bake for 20-25 minutes or until tester inserted in center comes out clean. Immediately remove from pan.

Yields: 30 muffins
