Refrigerator Strawberry Pie

Cool and refreshing strawberry gelatin pie, great for a hot summer picnic or for just any time of the year.

Ingredients

  • 6 C. sliced fresh strawberries
  • 2 small pkg. sugar free cook & serve vanilla pudding
  • 4 C. water
  • 2 small pkg. sugar free strawberry Jell-O
  • 1 pkg. fat free Cool Whip

Directions

In 9-inch pie plate, slice washed fresh strawberries, save 1 C. for top. Over medium heat cook the vanilla pudding using the 2 C. water. Cook until bubbling and pudding is disolved. Remove from heat and stir in strawberry Jell-O and mix well. Pour pudding mixture over the fresh strawberries and let set in refrigerator until it gels. Remove from refrigerator and spread with Cool Whip and top with last cup of fresh strawberries. Keep in refrigarator until ready to serve.
