  • olive oil
  • 2 large eggplant, sliced into 6 pieces
  • salt and pepper
  • 2 C. tomato sauce
  • 1 bunch fresh basil leaves
  • 1 lb. mozzarella, sliced 1/8-inch thick
  • 1/2 C. grated Parmesan cheese
  • 1/4 C. breadcrumbs

Preheat your oven to 450°F and lightly oil a baking sheet with olive oil. Place eggplant slices on baking sheet and season with salt and pepper. Roast for about 15 minutes. Remove and let cool. Reduce oven to 350°F. Transfer the eggplant into a baking dish and cover with tomato sauce. Sprinkle with basil and cover each eggplant slice with mozzarella. Top with Parmesan and breadcrumbs. Bake for 20 minutes. Let stand for five minutes before serving.
