Restaurant-Style Loaded Baked Potato
Serving Size / Yield
- 1 C. scallions, sliced
- 8 potatoes, cleaned
- 3 tablespoons bacon bits
- 1 cup vegetable oil
- 3 C. cheddar
- 16 ounces sour cream
Preheat oven to 375 degrees. Pierce potatoes using a fork and microwave about 12 minutes.
Cut potatoes in half and scoop out flesh until you are able to make small potato boats.
Fill potatoes with cheese, bacon and green onions then bake for about 7 minutes.
Top with any cold ingredients (like the sour cream) and serve.
