Reuben Casserole
Ingredients
- 1 (32 oz.) jar sauerkraut, drained
- ½ C. onion, chopped
- ½ C. parsley
- 2 tsp. caraway seed
- 4 C. shredded Swiss cheese ( or 16 slices quartered)
- 1 1/3 C. Thousand Island dressing
- 1 lb. thin sliced cooked corned beef
- 6 slices rye bread, cut into ½ inch cubes
- ½ C. melted margarine
Directions
Combine sauerkraut, onion, parsley and caraway seed. Mix well and layer in bottom of a 13 x 9 x 2 inch pan. Top with 2 C. (or 8 slices, quartered) Swiss cheese, 2/3 C. Thousand Island dressing and corned beef. Top with remaining dressing (2/3 C.) and Swiss cheese. Melt margarine and toss bread cubes; mix well. Sprinkle over top of casserole. Bake at 375 degrees for 35 minutes. Serve hot.
