Reuben Casserole
Ingredients
- 1 qt. sauerkraut, drained
- 2 16-oz. pkgs. deli corned beef
- 3/4 C. Thousand Island dressing
- 1 C. shredded Swiss cheese
- 2-3 slices Pumpernickel bread, cubed
- 2 Tbs. melted butter
Directions
Layer, in a 2-qt. casserole dish: sauerkraut, corned beef, salad dressing and Swiss cheese. Top with buttered cubed bread. Bake at 350 degrees for 40 minutes. For diet watchers, make with lighter dressing, cheese and margarine.
