Reuben Casserole

This recipe has been in my family for at least 50 years. My grandmother and mother were Hungarian and loved to make this simple dish at least twice a month. I am still carrying on this tradition today.

Ingredients

  • 2 14 oz. cans well drained, chopped sauerkraut
  • 2 10-11 oz. cans, undiluted condensed cream of chicken soup
  • 3/4 C. Half & Half
  • 4 Tbs. mustard
  • 4 Tbs. melted butter
  • 4 slices minced rye bread
  • 8 oz. shredded Swiss cheese
  • 1 minced onion
  • 1 tsp. black pepper and caraway seeds
  • 1 1/2 lb. chopped deli corned beef

Directions

Combine all ingredients in a sprayed baking dish and toss well. Bake uncovered at 325 degrees for 45 minutes.
