Reuben Corned Beef Casserole 216 Ways
Ingredients
- 2 C. shredded cooked corned beef
- 16 oz. frozen shredded hash browns
- 1 C. sauerkraut, drained
- 1/2 C. Thousand Island Dressing
- 1 1/2 C. shredded Swiss cheese, divided

- Elbow macaroni
- Cooked rice
- Cooked barley
- Penne
- Bow-tie pasta
- Cooked kasha
- COLUMN B
- Frozen mixed veggies
- Sugar snap peas
- Italian blend
- Peas and carrots
- Pepper strips
- Asparagus blend
- COLUMN C
- Prepared marinara sauce
- Prepared salsa
- Prepared Alfredo sauce
- Garden-style tomato pesto
- Sun-dried tomato pesto
- Spaghetti sauce
Directions
Heat oven to 350 degrees. Combine first 4 ingredients and 1 C. cheese until well-blended. Spoon into 9" baking dish coated with nonstick cooking spray. Sprinkle top with remaining cheese. Bake 30 minutes. Increase heat to broil. Broil 2" from heat source 8 minutes or until casserole is golden brown.
216 WAYS: Replace the potato with an item from Column A, the sauerkraut with a veggie from Column B and the dressing with an item in Column C.
