Rhubarb Bread

Ingredients
- 1 Tbs. lemon juice
- 1 C. milk
- 2 C. brown sugar
- 1/4 C. oil
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1 egg
- 2 1/2 C. flour
- 3 C. rhubarb, finely diced
- 1 Tbs. margarine
Directions
In a large bowl combine the lemon juice and milk. Let stand for 10 to 15 minutes. Add 1 1/2 C. brown sugar, oil and egg. Beat well. Add the vanilla. Add the baking soda to the soured milk. Add the flour and milk alternately to the other ingredients. Mix well after each addition. Stir in the rhubarb. Pour the batter into 2 greased loaf pans. In a small bowl cut 1 Tbs. margarine into 1/2 C. brown sugar. Sprinkle the mixture over the top of both loaves. Bake at 325 degrees for 1 hour or until bread test done.
