  • 6 C rhubarb, cut crosswise into 3/4-inch pieces
  • 1 C sugar
  • 1 ginger, finely grated

Stir together rhubarb and sugar in a saucepan for 10 minutes and bring to a boil. Reduce heat and simmer until all rhubarb pieces have broken down. Remove from heat.

Press down firmly on the ginger with a spoon until juices are released. Stir ginger juice into rhubarb mixture.

Let sauce cool completely before serving.
