Adding rhubarb to regular oatmeal cookies adds a sweet fruity flavor.

Ingredients

  • 3/4 C. sugar
  • 1/3 C. oil
  • 1 egg
  • 1 tsp. vanilla
  • 1 C. rhubarb sauce (unsweetened)
  • 1/4 tsp. cinnamon
  • 1 1/3 C. flour
  • 1/4 tsp. salt
  • 2 C. oatmeal (not instant)
  • 1/2 tsp. soda
  • 1/2 tsp. baking powder
  • 1/2 C. chopped walnuts

Mix sugar and oil together. Add beaten egg, vanilla, rhubarb sauce and oatmeal. Sift dry ingredients together and add to first mixture. Stir in walnuts. Drop from tsp. onto cookie sheet. Bake at 375 degrees for 15 minutes or until golden brown.
